Spring CSA News: Week Two

Harvest List—this week’s share will include some combination of the following seasonal produce:

Green Garlic Pasta
A simple Spring meal.
Bring a large pot of salted water to a boil and add the pasta of your choice. Cook and drain, being sure to set aside 1 cup of the pasta water. Meanwhile, thinly slice 3 heads of green garlic (all the way up to the green part) and chop a handful of parsley. Heat olive oil in a medium saucepan and add garlic, parsley, and a pinch of red pepper flakes as well as 1/4 cup of the pasta water. Cover and cook til soft, adding more water as needed. Add the pasta to the garlic mixture, toss to combine, and add a bit more pasta water to make for a creamier sauce. Serve with fresh ground pepper, parmesan cheese and minced green garlic tops (if you don’t want more garlic flavor, save the tops in your freezer for your next batch of stock).

CSA Harvest Day

CSA Farmer Maung Pau (pictured on the top left) bunches green garlic at one of our new wash stations along with CSA farmer Tri Sa’s daughters. CSA farmer, Ha Na,(pictured on the bottom left) brings in a basket of freshly picked cilantro and kale from her section of the farm. CSA harvest mornings are exciting and hectic on any farm, but at TTCF, where we have 7 different farmers packing 74 boxes you can imagine the bustle! Even though each farmer is in charge of packing their own boxes, it is a truly cooperative effort. Sons and daughters and aunties come out to help pick, wash, and translate and our experienced farmers help the new farmers learn the ropes. Right now, we’re basking in the joys of our new wash stations and our big, shiny walk-in cooler. We can already tell that these additions will make harvest days a little easier for our farmers and our produce a little fresher for all of you.
